And now, for something a little differnet.

Today. February 20th 2012. Great start. Hung out with the little one,got 4 loads of laundry done in a never-ending flooded basement. While waiting for the clothes to finish, Tiny man and I watched American Splendor. Truth be told, I enjoyed it. Paul Giamatti is one hell of an actor.
Once the movie ended, and the baby was napping, I decided to try something different. Something new. So I figured out a way to make Spinach pesto. Among doing this for the first time, and being very pleased with it's outcome, I've decided that I'm becoming a culinary wizard! I'd like to share this recipe with the world, as I cannot keep something so great to myself.

4 cups fresh spinach leaves , well-washed and stemmed
1 cup fresh parsley , preferably Italian flat leaf
1/2 cup parmesan cheese , freshly grated, not canned
Garlic Powder
4 tablespoons extra virgin olive oil
Dash of salt
Dash of fresh ground black pepper
Directions:

Place all ingredients into food processor and process to a fine paste.

Taste and adjust seasonings and transfer to a glass container and top with a thin coat of olive oil to prevent the top of the pesto from discoloring.
AMAZING!

There ya have it folks. I'm now off to snake the basement drain, and maybe watch another flick. Until next time.
